VIDEO: Sunny Solstice Eggs with spinach, asparagus, green garlic & herbed bechamel

Fresh Company will miss being at Storm King Art Center celebrating the solstice and supporting Storm King as we do every year. Here is a recipe and video with instructions we offer to everyone cooking at home. If you are inspired to make this dish it is adaptable seasonally. Here we are featuring ingredients from the Hudson Valley. Wishing you a peaceful and healthy summer.

Sunny Solstice Eggs: This recipe was inspired by Jacques Pepin’s Mollet Eggs Florentine. Here we use bechamel instead of Mornay sauce. This dish is built around Hudson Valley ingredients, especially at the solstice where it remains late spring. As summer arrives, substitute seasonal alliums and leafy greens. Serves 4.
